To protect their prestige and brand name, manufacturers always give their seriousness to the control of pathogenic microorganism present in products through contact with factories and equipment/tools surfaces, workers’ hands, air condition and other direct contact surfaces.
Europe and the US has set forth their regulations (EC2073/2005 by EU; USDA FSIS, FDA by the US) providing safety criteria on controlling various kinds of bacteria. These criteria are applicable to products that are distributed in the market during their full shelf life. The Vietnam Ministry of Health clearly regulates the limits of microorganisms in food according to the Decision No. 46/2007/QD-BYT. In addition, QCVN 8-3:2012/BYT also provides national technical regulations for food microbiological contamination.
